Anastasia is one of, if not the, most hardcore vegan joints around, operating with a valiant dedication to clean and healthy living. They only use raw materials that don’t contain any harmful chemicals, preservatives or artificial flavoring and coloring. And you won’t find any white sugar, white flour or distilled salts and oils in their food either.
With the exception of the veggie burgers, tofu scrambled eggs and some desserts, you won’t find a lot of dishes that are trying to do a vegan take on a non-vegan classic. Their dishes are pretty original and are concocted with ingredients that are even hard to describe sometimes. Take their grape leaf envelopes, for instance, which, among a long list of fillings, include a blue tahini made with spirulina, a fresh-water algae that contains a lot of protein.
